Hawaiian Chicken

  • 4 boneless skinless chicken breasts
  • 0.5 cup soy sauce
  • 0.3 cup dry sherry
  • 0.5 cup pineapple juice
  • 2 tbsp red wine vinegar
  • 2 tbsp sugar
  • 3 clove garlic, minced
  • 4 slice Muenster or provolone cheese

Instructions

    Whisk together soy sauce, sherry, pineapple juice, red wine vinegar, sugar, and garlic.

    Place chicken breasts in a zip-lock bag, pour marinade over, and marinate overnight in the refrigerator.

    Remove chicken from marinade; reserve marinade.

    Grill or pan-sauté chicken over medium-high heat 6–7 minutes per side until cooked through (165°F/74°C internal).

    Alternatively, bake at 375°F (190°C) for 25–30 minutes.

    In the last 2 minutes of cooking, lay a slice of Muenster or provolone on each breast.

    Cover pan or close grill lid until cheese melts.

    Serve immediately with rice and grilled pineapple rings.
