Fresh Fruit Pops

Creamy blueberry and mascarpone frozen pops sweetened with honey and enriched with heavy cream.

  • 0.5 pint blueberries, stemmed and rinsed
  • 1 to taste honey
  • 10 oz mascarpone cheese
  • 0.3 cup heavy cream (up to 1/2 cup)

    Using a food processor fitted with a metal blade, puree the blueberries until smooth.

    Sweeten the blueberries with honey to taste. Add the mascarpone and puree until smooth.

    With the machine running, add enough cream to thin the filling until pourable.

    Fill each pop mold with the filling. Cover tightly with plastic wrap and push sticks into each mold.

    Freeze until frozen, about 2 to 3 hours.

    Remove from the freezer and discard plastic wrap. If pops will not release easily, place molds briefly in hot water.
