Florentine Stuffed Meatloaf

  • 1 lb lean hamburger
  • 0.5 tsp nutmeg
  • 0.5 cup mozzarella, shredded
  • 1 each egg, slightly beaten
  • 0.3 tsp salt (optional)
  • 1 each onion, chopped
  • 0.3 tsp pepper
  • 2 each ounce) packages frozen chopped spinach, thawed

Instructions

    In a medium bowl, combine hamburger, egg, onion, salt and pepper.

    Line sides and bottom of an 8 x 4-inch loaf pan with 2/3 of meat mixture.

    Press excess moisture out of spinach.

    In a medium bowl, combine spinach and nutmeg.

    Spread half of spinach over meat.

    Press lightly.

    Sprinkle cheese over spinach.

    Top with remaining spinach.

    Press lightly.

    Form remaining meat over top, sealing seams.

    Bake at 350 degrees F for 50 to 55 minutes or until brown and firm in center.
