Fish Baked in Pastry

Fish steaks brushed with olive oil, sprinkled with herbs and garlic, then wrapped in herb pie crust and baked until golden. The pastry keeps the fish moist.

  • 4 each fish steaks, skin and bones removed
  • 3 tbsp olive oil
  • 2 clove garlic, finely chopped
  • 1 tsp dried herbs (rosemary, thyme, basil, or dill)
  • 2 cup all-purpose flour
  • 0.7 cup shortening or butter
  • 0.5 tsp salt
  • 3 tbsp cold water

    Make pie crust: stir together flour and salt with a fork. Cut half the shortening into the flour, then rub between fingers until mixture has the texture of cornmeal.

    Cut in remaining shortening, leaving it in roughly pea-sized lumps. Add just enough cold water to make dough come together. Chill until somewhat stiff, then roll out on a well-floured board.

    Brush each fish steak thoroughly with olive oil.

    Sprinkle with dried herbs and finely chopped garlic.

    Wrap each steak in pie crust dough. Seal edges well.

    Bake at 450–475°F until crust is golden. The hotter the oven, the less done the fish will be when crust is ready.

    The pastry shell keeps the fish nice and moist. Serve immediately.
