- 1 0.5 lb medium shrimp, peeled and deveined
- 3 0.5 oz vermicelli or thin spaghetti
- 0.3 cup butter
- 0.3 cup all-purpose flour
- 0.7 cup chicken broth
- 0.7 cup heavy whipping cream
- 0.8 cup shredded Swiss cheese
- 2 0.5 tbsp dry sherry
- 4 oz diced pimento, drained
- 2 tbsp grated Parmesan cheese
- 2 tbsp slivered almonds

Preheat oven to 350°F.

Boil shrimp in salted water 3 to 5 minutes; drain and rinse with cold water. Peel and devein.

Cook vermicelli according to directions; drain well.

Melt butter in a saucepan over low heat; add flour, stirring until smooth. Cook 1 minute.

Gradually add chicken broth and cream, stirring constantly until thickened.

Add Swiss cheese, sherry, pimento, salt, and pepper; stir until cheese melts.

Combine shrimp and vermicelli with sauce. Pour into a greased 2-quart casserole.

Sprinkle with Parmesan and almonds. Bake at 350°F for 30 minutes. Garnish with parsley.
