Hearty Fiesta Cassoulet

  • 0.5 lb angel hair pasta, uncooked
  • 14 0.5 oz canned diced tomatoes
  • 15 0.5 oz canned black beans, drained
  • 0.3 cup frozen corn
  • 9 oz smoked sausage, thinly sliced
  • 1 tsp garlic salt
  • 0.5 tsp red pepper flakes
  • 2 tbsp grated Monterey Jack cheese

Instructions

    In a large pot or Dutch oven, combine pasta, diced tomatoes, black beans, corn, and smoked sausage.

    Add 2¼ cups water and garlic salt. Stir well.

    Bring to a low boil, then cover, reduce heat, and simmer 10 minutes, stirring occasionally, until pasta is cooked and liquid is mostly absorbed.

    Season with red pepper flakes to taste.

    Ladle into bowls and garnish with grated Jack cheese.
