Chinese Potato Salad

  • 2 0.5 lb medium potatoes (5-6 medium)
  • 4 slice bacon, well-cooked and crumbled
  • 0.8 cup chopped bok choy
  • 1 red pepper red pepper, diced
  • 0.5 cup chopped green onion
  • 0.3 cup chopped cilantro
  • 1 1/3 cup mayonnaise
  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 1 0.5 tsp sesame oil
  • 1/8 tsp hot mustard powder
  • 1/8 tsp salt

Instructions

    Boil the potatoes until cooked but still firm. Cut into potato salad-sized chunks.

    Mix together mayonnaise, sugar, soy sauce, sesame oil, hot mustard powder, and salt to make the sauce.

    Put all solid ingredients (potatoes, bacon, bok choy, red pepper, green onion, cilantro) together in a large bowl.

    Add the sauce and mix well.

    Serve immediately or chill briefly for best flavor.
