Danish Bleu Lobster Casserole

- 3 tbsp butter
- 1 lb raw lobster meat, cut into bite-size pieces
- 3 tbsp all-purpose flour
- 0.8 tsp dry mustard
- 1 cup heavy cream
- 0.5 cup milk
- 3 slice bread, crusts removed, torn into pieces
- 0.5 cup Danish blue cheese, crumbled
- 1 tsp salt and pepper, to taste

Preheat oven to 350°F. Lightly grease a 2-quart baking dish.

Melt butter in a pot over low heat. Gently sauté lobster meat until it just begins to change color; do not overcook. Remove lobster with a slotted spoon and set aside.

Stir flour, dry mustard, salt, and pepper into the remaining butter. Gradually whisk in cream and milk. Cook, stirring constantly, until thickened, about 5 minutes.

Return lobster to the pot. Stir in torn bread pieces and crumbled blue cheese.

Pour into prepared baking dish. Bake 20–25 minutes until bubbly and lightly browned.
