Curry of Shrimp with Orange Rice

- 3 cup cooked shrimp, peeled and deveined
- 0.3 cup butter
- 3 tbsp all-purpose flour
- 2 tbsp curry powder (or to taste)
- 0.5 tsp salt
- 0.3 tsp paprika
- 1 pinch ground nutmeg
- 2 cup light cream
- 1 tbsp fresh lemon juice
- 1 tsp dry sherry
- 1 tsp onion juice or grated onion
- 1 cup long-grain white rice, uncooked
- 2 cup water
- 1 tsp salt
- 1 tbsp orange peel, grated
- 0.5 cup fresh orange juice

Make the orange rice: boil water with salt. Add rice; cook until done, about 18 minutes. Remove from heat; stir in orange peel and orange juice. Keep warm.

In a saucepan, melt butter over medium heat. Blend in flour, curry powder, salt, paprika, and nutmeg.

Gradually stir in cream; cook until thickened, stirring constantly.

Add cooked shrimp, lemon juice, sherry, and onion juice. Heat thoroughly.

Taste and adjust seasoning. Serve over orange rice with curry condiments (chutney, coconut, chopped peanuts) on the side.
