Lemongrass Soup

  • 8 cup chicken stock
  • 0.5 bunch cilantro
  • 1 can straw mushrooms
  • 16 large shrimps, peeled and deveined
  • 1 cup snow peas
  • 1/3 cup shredded carrots
  • 1 lime lime, juiced
  • 0.8 tsp crushed red pepper
  • 1 chili pepper chili pepper, seeded and cut into rings
  • 4 tbsp nam plah (fish sauce)
  • 6 stalks lemongrass

Instructions

    Bring the broth to a simmer.

    Add crushed red pepper and shrimp; simmer for 5 minutes.

    Add lemongrass and simmer for another 5 minutes.

    Add the straw mushrooms, snow peas, carrots, cilantro, lime juice, chili pepper, and fish sauce.

    Simmer a few more minutes until vegetables are bright and still crisp.

    Be careful not to overcook or the vegetables will lose their color and get limp.

    Remove lemongrass stalks before serving.
