Curried Salmon-Rice Loaf

Cold salmon and rice molded into a loaf with green onions, curry, lemon, and garlic — served on lettuce.

  • 17 0.5 oz canned salmon (1 large can)
  • 1/3 cup chopped green onions
  • 2 tsp curry powder
  • 1 tbsp lemon juice
  • 1 tbsp cider vinegar
  • 1 tbsp chopped or powdered garlic
  • 3 cup cooked rice

Instructions

    Flake salmon; remove skin and bones.

    Add salmon, green onions, curry powder, lemon juice, cider vinegar, and garlic to cooked rice. Mix well.

    Pack mixture firmly into a plastic-lined loaf pan. Chill several hours in refrigerator.

    When ready to serve, unmold onto a lettuce-lined platter. Makes 4 servings.
