  • 3 large ripe tomatoes
  • 1 cucumber
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 1/2 cup fresh coriander, chopped
  • 3 green onions, chopped
  • 1 Spanish onion, sliced thin

Instructions

    Core tomatoes, cut into slices. Score cucumber lengthwise with fork, slice thinly.

    Combine parsley, coriander, mint and green onions.

    In serving bowl, layer Spanish onions, cucumber and tomatoes, sprinkling parsley mixture between layers.
