North Carolina Chopped Barbecued Pork

A tangy vinegar-based North Carolina BBQ pork shoulder braised in a ketchup-vinegar-cinnamon sauce, then chopped or shredded.

  • 1 0.5 lb pork shoulder roast
  • 0.5 tsp salt
  • 0.5 tsp celery seed
  • 1/8 tsp ground cinnamon
  • 1/8 cup cider vinegar
  • 0.3 cup ketchup
  • 0.3 tsp chili powder
  • 0.3 tsp ground nutmeg
  • 0.3 tsp sugar
  • 0.5 cup water

Instructions

    Brown roast in a small amount of fat.

    Mix salt, celery seed, cinnamon, vinegar, ketchup, chili powder, nutmeg, sugar, and water in a saucepan; bring to a boil.

    Pour sauce over roast in a Dutch oven or crockpot. Cover and cook on LOW 4–6 hours.

    Chop or shred pork; serve on buns with cider vinegar and Tabasco sauce on the side.
