Luchow's German Potato Salad

  • 1 lb potatoes (about 3 medium)
  • 6 slice bacon, diced
  • 1 medium onion, diced
  • 0.5 cup vinegar
  • 0.5 cup beef stock or bouillon
  • 1 tsp salt
  • 0.3 tsp black pepper
  • 1 tsp sugar
  • 1 large egg yolk, beaten

Instructions

    Scrub potatoes and rinse. Boil in jackets until tender; let cool. Peel and cut into 1/4-inch slices.

    Cook bacon in a hot pan until crisp.

    Add diced onion to bacon; stir and cook until transparent.

    Add vinegar, stock or bouillon, salt, pepper, and sugar. Stir and bring to a boil.

    Stir beaten egg yolk into the hot dressing; remove from heat immediately.

    Pour hot dressing over potatoes and serve. Serves 2 to 4.
