Kale Bean Soup

  • 2 medium minced garlic cloves
  • 3 c. chopped kale (packed)
  • 1 c. chopped onions
  • 5 c. water
  • 2 c. cubed potatoes
  • 1 1/2 tsp. salt
  • 1 tsp. cumin
  • 2 tbsp. nutritional yeast flakes
  • 3 c. cooked navy beans (canned OK)

Instructions

    STEAM garlic and onions in small amount of water in a large pot

    ADD all but beans

  3. 3

    Cover and cook over medium-high until potatoes are done (about 20 minutes)

    ADD beans

  5. 5

    COOK for several more minutes

  6. 6

    If too thin, THICKEN with 1–2 tbsp. cornstarch in 1/4 c. water

  7. 7

    YIELDS: 8 cups
