Hot and Spicy Shrimp

- 2 lb raw shrimp in shells (30-35 per pound)
- 0.5 lb butter
- 0.3 cup peanut oil
- 3 clove garlic, chopped
- 2 tbsp dried rosemary
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 small hot chili pepper, chopped (or 2 tbsp cayenne)
- 2 tsp freshly ground black pepper
- 2 leaves bay leaves, crumbled
- 1 tbsp paprika
- 2 tsp lemon juice

Melt butter and peanut oil in a flameproof baking dish over medium heat.

Add garlic, rosemary, basil, thyme, oregano, hot pepper, black pepper, bay leaves, paprika and lemon juice. Bring to a boil.

Reduce heat and simmer 10 minutes, stirring frequently. Remove from heat and let flavors marry for at least 30 minutes. (Sauce can be made a day ahead and refrigerated.)

Preheat oven to 450°F. Reheat the sauce in the baking dish.

Add shrimp and cook over medium heat on the stovetop until shrimp just begin to turn pink.

Transfer to oven and bake about 10 to 12 minutes more, until shrimp are cooked through.

Taste for seasoning, adding salt if necessary. Serve with crusty bread to soak up the spicy butter sauce.
