Smoked Salmon with Maple Orange Glaze

- 2 0.5 lb salmon fillet, cut into portions
- 4 cup cool water (for curing liquid)
- 1 cup maple syrup (for curing liquid)
- 0.5 cup brown sugar (for curing liquid)
- 0.3 cup kosher salt (for curing liquid)
- 1 zest of 1 orange (for curing liquid)
- 0.5 cup maple syrup (for glaze)
- 0.3 cup orange juice (for glaze)

Combine all curing liquid ingredients and stir until salt dissolves. Submerge salmon portions in curing liquid, cover, and refrigerate 8-12 hours.

Remove salmon from curing liquid and transfer to a cooling rack over a cookie sheet. Refrigerate 8 hours or overnight to develop a pellicle.

Combine maple syrup and orange juice in a small bowl for the glaze; set aside.

Preheat smoker to 165-170°F. Place salmon on grates skin side down and smoke 3-4 hours, basting with glaze every 45-60 minutes, until internal temp reaches 145°F.
