Honey Barbeque Riblets

- 1 cup ketchup
- 0.3 cup water
- 0.5 cup honey
- 0.5 cup corn syrup
- 0.3 cup apple cider vinegar
- 2 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp molasses
- 2 tsp dry mustard
- 1 tsp chili powder
- 0.3 tsp liquid smoke flavoring
- 3 lb pork rib tips or riblets
- 1 tsp salt, garlic powder, and pepper to taste

Make the sauce: combine ketchup, water, honey, corn syrup, vinegar, garlic powder, onion powder, molasses, dry mustard, chili powder, and liquid smoke in a saucepan. Simmer 20 minutes.

Season ribs with salt, pepper, and garlic. Sear on a grill or under a broiler until mahogany in color and internal temperature reaches 155°F.

Place ribs on a rack in a deep roasting pan. Add a mixture of water and liquid smoke to the pan bottom (4:1 ratio), not touching the ribs. Seal tightly with foil.

Slow cook in a 275°F oven for 2–5 hours until meat is tender. Check periodically.

Finish on the grill or broiler until the bone marrow sizzles. Brush with Honey Barbeque Sauce just before serving.
