Hawaiian Chicken Breasts

  • 4 whole chicken breast halves
  • 3 tbsp butter
  • 4 whole green onions, chopped
  • 14 oz canned sliced pineapple, juice reserved
  • 1 whole avocado, sliced into 8 strips

Instructions

    Chop green onions using only 1 inch of green tops. Sauté in 1 tablespoon butter in a skillet until glazed. Transfer to crock pot.

    Coat chicken breasts in seasoned flour. Sauté in remaining 2 tablespoons butter until brown on both sides.

    Transfer chicken to crock pot. Pour reserved pineapple juice over chicken.

    Cover and cook on LOW for 3 to 4 hours (HIGH for 1½ to 2 hours) until tender.

    Sauté pineapple slices in a bit of butter until golden.

    Place pineapple slices on a heated platter. Top each with a chicken breast. Lay 2 avocado strips on each breast.

  7. 7

    Serve pan drippings over rice.
