Cafe St. Petersburg's Salad
A Russian-style composed salad of chicken, steamed carrots, potatoes, dill pickles, cucumber, and hard-cooked eggs bound in a creamy mayo-sour cream dressing.

- 2 cup cooked chicken, cut into bite-size pieces
- 4 carrots, finely chopped and steamed tender
- 4 medium boiling potatoes, 1/2-inch cubes, steamed tender
- 2 small whole dill pickles, finely chopped
- 2 pickling cucumbers, peeled and cubed
- 3 hard-cooked eggs, chopped
- 1 tsp salt
- 0.8 cup mayonnaise
- 0.8 cup sour cream
- 1 tbsp warm water
- 0.5 bunch parsley, for garnish

In a large bowl, gently combine chicken, carrots, potatoes, pickles, cucumbers, eggs, and salt.
