Grilled Shrimp in Apricot Hoisin Glaze

- 2 lb large shrimp, peeled and deveined
- 2 tbsp garlic, minced
- 1/8 cup soy sauce
- 2 tbsp extra-virgin olive oil
- 1 tbsp olive oil
- 2 tbsp garlic, minced
- 0.3 cup sesame seeds
- 1 tbsp fresh ginger, minced
- 1 cup apricot preserves
- 8 oz hoisin sauce

Make the glaze: heat olive oil in a saucepan over medium-high. Sauté garlic, sesame seeds, and ginger 2 minutes. Stir in apricot preserves and hoisin sauce. Reduce to medium and simmer 5 minutes. Keep warm.

Toss shrimp with minced garlic, soy sauce, and olive oil. Marinate up to 4 hours in refrigerator.

Skewer shrimp on metal or soaked wooden skewers.

Grill over hot coals or high heat about 2 minutes per side until just pink.

Remove shrimp from skewers into a large bowl. Pour warm apricot hoisin glaze over shrimp; toss to coat.
