  • 1 lb shrimp, cleaned and deveined
  • 1 tbsp butter
  • 4 clove garlic, finely minced
  • 1 cup fresh corn (or thawed frozen corn)
  • 1 cup salsa (choose your heat level)

Instructions

    In a wok over medium-high heat, add butter. When melted, add shrimp and garlic.

    Stir quickly until all shrimp has turned pink.

    Add fresh or thawed corn; stir quickly to heat through.

    Add salsa; stir quickly to heat thoroughly. Serve with black beans, a green salad, and warm flour or wheat tortillas.
