- 1 can whole kernel corn Dressing:, 16 oz.
- 2 tomatoes, peeled and diced or 1 can whole 2 tablespoons taco seasoning mix
- 1 small onion, chopped fine
- tomatoes, drained well and diced ¼ cup water
- ½ cup sliced ripe olives ¼ cup oil
- ¼ cup diced green pepper ¼ cup vinegar
Instructions

Drizzle the dressing over the salad.

Toss gently until everything is coated.

Garnish with chopped fresh cilantro, lime wedges, extra salsa, and Cotija cheese.

Serve immediately or refrigerate until ready to eat.

Let the salad marinate in the fridge for about 1 hour.
