- 1 c basmati rice
- 3/4 c water
- 1 c fresh corn
- 1/4 c sliced black olives
- 1/2 c red onion
- 1/2 c red bell pepper
- 1/2 c yellow bell pepper
- 1/2 c orange bell pepper
- 1/2 c fresh cilantro
- 1 clove garlic, minced
- 1/4 c olive oil
- 2-3 T freshly squeezed lime juice
- 1/2 t cumin
Instructions

Bring water and rice to a boil, turn heat to low, and simmer for 15 minutes.

Remove from heat and allow to cool. Add vegetables and stir well.

In a small bowl combine dressing ingredients.

Pour over the rice mixture and toss well.
