Farmer's Cheese Soup
A rich, hearty cheese soup with vegetables, cheddar, and Swiss cheese-topped toast — finished under the broiler and scattered with crispy bacon.

- 3 tbsp butter
- 1 cup onion, finely chopped
- 1 cup celery, chopped
- 0.8 cup carrots, sliced into rounds
- 0.5 lb broccoli, separated into small florets
- 2 cup chicken broth
- 3 cup milk
- 4 oz cheddar cheese, shredded
- 6 slice French bread, toasted
- 0 as needed Swiss cheese, sliced into thin wedges (2 per bread slice)
- 4 slice bacon, cooked and crumbled

Melt butter in a 3-quart saucepan over medium heat. Add onion and celery; cook, stirring, for 5 minutes.

Add carrots, broccoli, and chicken broth. Cover, bring to a boil, then reduce heat and simmer 15 minutes until vegetables are tender.

Add milk and bring to a simmer. Add cheddar cheese and stir until melted.

Pour soup into a broiler-safe casserole dish. Float toasted bread slices on top and cover each with two wedges of Swiss cheese.

Place under the broiler for 2–3 minutes until cheese melts and turns golden.
