Easy Shepherd's Pie

- 1 0.8 lb potatoes (about 3 large), peeled and quartered
- 0.5 cup butter, divided
- 1 medium onion, chopped
- 1 0.5 cup mixed vegetables (diced carrots, corn, peas)
- 1 0.5 lb ground round beef
- 0.5 cup beef broth
- 1 tsp Worcestershire sauce
- 0 to taste salt, pepper, and other seasonings

Boil peeled, quartered potatoes in salted water until tender, about 20 minutes. Drain.

While potatoes cook, melt 4 tablespoons butter in a large sauté pan over medium heat. Add onion and cook until tender, 6-10 minutes. Add carrots with onions; add peas or corn toward the end.

Add ground beef and brown until no longer pink. Season with salt and pepper. Add Worcestershire sauce and beef broth. Simmer uncovered 10 minutes.

Mash cooked potatoes with remaining 4 tablespoons butter; season with salt and pepper.

Preheat oven to 400°F. Spread meat mixture in a large baking dish. Spread mashed potatoes evenly on top.

Bake 25-30 minutes until top is lightly golden. Serve hot.
