Dijon Chicken Pasta

- 4 boneless, skinless chicken breast fillets
- 2 tsp salt
- 1 tsp paprika
- 0.5 tsp dried thyme
- 1 garlic clove, pressed
- 0.5 tsp olive oil
- 1 cup strained plain yogurt (or Greek yogurt)
- 2 tbsp cornstarch
- 1 cup evaporated skim milk
- 2 tsp Dijon mustard
- 2 tbsp grated Parmesan cheese
- 1 lb penne pasta
- 1 small tomato, diced, for garnish

Make the sauce: sauté garlic in olive oil for 1–2 minutes. Whisk yogurt with cornstarch; add evaporated milk and mustard. Pour into pan and stir over medium heat until thickened. Stir in Parmesan.

Mix salt, paprika, and thyme. Season chicken breasts with the spice blend.

Grill chicken over medium-high heat for 4–5 minutes per side until cooked through.

Cook pasta according to package directions; drain.

Slice grilled chicken. Serve over pasta topped with Dijon sauce. Garnish with diced tomato and parsley.
