Dad's Mussels

  • 5 0.5 lb fresh mussels
  • 3 large onions, cut in rings
  • 1 0.8 oz butter
  • 1 cup water
  • 2 cup dry white wine
  • 1 pinch salt and pepper
  • 1 bunch fresh parsley
  • 1 lemon sliced, for serving

Instructions

    Scrub and clean mussels under cold running water. Discard any with broken shells or that don't close when tapped.

    In a large pot (at least 5-quart), melt butter over medium heat. Add water, white wine, salt, and pepper. Bring to a short boil.

    Add the cleaned mussels. Cover and cook over medium-high heat for 10 to 20 minutes, shaking the pot several times during cooking.

    The mussels are ready when all shells have opened. Discard any that remain closed. Stir in fresh parsley.

    Serve immediately in the broth with slices of lemon and toasted white bread for dipping.
