Crunchy Almond Shrimp

- 1 lb medium shrimp (31-40 count), peeled, deveined, and butterflied
- 2 large eggs large eggs
- 0.3 cup heavy cream
- 0.5 cup all-purpose flour
- 2 clove garlic, minced (or ½ tsp garlic powder)
- 0.5 tsp ground ginger
- 0.3 tsp hot pepper sauce
- 1 cup blanched almonds, finely crushed
- 2 cup cooking oil, for frying

In a bowl, whisk together the eggs, cream, flour, garlic, ginger, and hot pepper sauce until smooth.

Peel, devein, and butterfly the shrimp. Pat them dry.

Dip each shrimp in the batter to coat well, then place on a sheet of wax paper.

Spread the crushed almonds on a plate. Roll each battered shrimp in the almonds, pressing lightly to adhere.

Heat the cooking oil in a deep fryer or heavy pot to 350°F.

Fry the shrimp in batches until golden, about 2–3 minutes. Drain on paper towels.
