Grilled Banana Leaf Wrapped Fish

- 0.5 cup olive oil
- 0.3 cup fresh lemon juice
- 1 tbsp chopped fresh thyme
- 4 bass fillets or firm white fish (6 to 8 oz each)
- 16 slice fresh lemon
- 8 sprig fresh thyme
- 8 large banana leaves, soaked in water
- 1 tbsp olive oil (for vegetables)
- 4 cup julienned assorted vegetables (tomatoes, onions, carrots, mushrooms)

Preheat the grill.

In a mixing bowl, combine olive oil, lemon juice, and thyme. Season with salt and pepper.

Season fish with salt and pepper. Brush both sides with the lemon-thyme mixture. Lay lemon slices and thyme sprigs over each fillet.

Cross two banana leaves forming an X. Place a fish fillet in the center. Wrap leaves around the fish and secure with toothpicks.

In a sauté pan, quickly sauté the julienned vegetables in olive oil. Season with salt and pepper.

Grill the banana leaf packets for 4 to 5 minutes per side. Serve the packets opened over a bed of sautéed vegetables.
