Chilled Aromatic Shrimp with Cilantro-Ginger-Lime Cream

  • 1 cup fresh cilantro, loosely packed
  • 1 tbsp fresh ginger, chopped
  • 2 clove garlic
  • 2 stalks scallions (green onions), sliced
  • 1 large jalapeño pepper, halved and seeded
  • 1 tsp sugar
  • 0.5 tsp salt
  • 3 tbsp mild vegetable oil
  • 3 tbsp fresh lime juice
  • 2 lb medium or large shrimp, peeled with tails on
  • 1 cup heavy cream

Instructions

    In a food processor, combine cilantro, ginger, garlic, scallions, and jalapeño. Process until finely chopped. Add sugar, salt, oil, and lime juice and mix well.

    Toss shrimp in the cilantro mixture until well coated. Cover and let stand 1 hour at cool room temperature, or longer in the refrigerator.

    Spoon shrimp out of marinade, reserving marinade. Sauté shrimp in a skillet without additional oil until barely cooked. Arrange on a serving plate and chill.

    Add reserved marinade to the cooking liquid from the shrimp. Boil, stirring, until liquid evaporates leaving a thick green purée. Add cream and boil again, stirring constantly, until thick enough to pour. Do not over-reduce; sauce thickens as it cools.

    Pour sauce into a serving bowl and refrigerate with the shrimp until both are well chilled. Serve chilled.
