Parmesan Sherry Chicken (Bird of Paradise)

  • 1 chicken, cut into serving pieces (about 3-4 lbs)
  • 1 egg, beaten
  • 0.3 cup milk
  • 0.3 cup Parmesan cheese, grated
  • 0.5 cup butter
  • 1 cup dry sherry
  • 1 tsp salt and pepper to taste

Instructions

    Season chicken with salt and pepper. Combine beaten egg and milk in a shallow bowl. Place grated Parmesan in a separate shallow dish.

    Dip each chicken piece in the egg mixture, then roll in the Parmesan to coat.

    In a large, deep skillet over medium heat, melt butter. Add chicken and brown 5–6 minutes per side.

    Pour in dry sherry. Cover and cook over medium-low heat for 35–45 minutes until cooked through.
