Pan Seared Squab Rice Dressing

Tender squab with rice and vegetable dressing.

  • 4 each Squab
  • 2 cup Long-grain rice
  • 4 cup Chicken stock
  • 1 cup Chopped onions
  • 0.5 cup Chopped celery
  • 0.5 cup Chopped carrots
  • 3 tbsp Butter
  • 1 tbsp Olive oil
  • 1 tsp Thyme

Instructions

    Season squab inside and out.

    Sear in butter and oil for 4-5 minutes per side.

    Transfer to baking dish.

  4. 4

    Boil stock; add rice, vegetables, and thyme.

  5. 5

    Simmer 15-20 minutes until rice is tender.

  6. 6

    Spoon rice dressing around squab.

  7. 7

    Cover with foil and bake at 350 degrees F for 15-20 minutes.

    Rest 5 minutes before serving.
