- 2 cup macadamia nuts
- 10-inch unbaked pie crust
- 1 cup shredded coconut flakes
- 4 eggs
- 0.5 cup sugar
- 0.5 cup light brown sugar, packed
- 1 cup light corn syrup
- 0.5 tsp pure vanilla extract
- 1/8 tsp salt
- 4 tbsp butter, melted
- 1 tbsp flour
- 8 scoops vanilla ice cream

Preheat the oven to 375 degrees F.

Spread the macadamia nuts on a baking sheet and toast until golden, about 8 to 10 minutes. Remove and cool, then roughly chop.

Line a 10-inch tart pan with the pastry. Sprinkle the chopped nuts and coconut flakes over the pastry.

In a mixing bowl, beat the eggs. Add the sugar, brown sugar, corn syrup, vanilla, salt, melted butter, and flour. Mix well.

Pour the mixture over the macadamia nuts and coconut in the tart shell.

Place on a sheet tray and bake for about 45 to 50 minutes, or until the filling sets.

Remove from the oven and cool completely. Serve each slice with a scoop of vanilla ice cream.
