Low Fat German Potato Salad

  • 1 package frozen vegetarian bacon, thawed and chopped
  • 1 tbsp all-purpose flour
  • 0.3 cup sugar
  • 1/3 cup white vinegar
  • 2/3 cup hot water
  • 2 lb white potatoes, boiled until just tender
  • 10 green onions green onions, finely chopped
  • 0.5 tsp salt
  • 1/8 tsp ground black pepper

Instructions

    In a non-stick skillet cook vegetarian bacon over low heat, stirring constantly for about 8 minutes or until crispy.

    Add flour and stir for about one minute.

    Combine sugar, vinegar, and hot water; add to bacon mixture. Cook, stirring constantly, until sauce thickens.

    Drain potatoes well, cool, peel, and slice.

    Add potatoes to the sauce along with the onion, salt, and pepper.

    Serve warm or chilled.
