Baba's Potato Soup

An old-fashioned Eastern European potato soup with homemade drop noodles poured right into the pot, a comforting family recipe passed down generations.

  • 4 medium potatoes, peeled and cubed
  • 0.5 cup butter (1 stick)
  • 1 large onion, diced
  • 2 eggs
  • 0.5 cup flour (approx, for drop noodles)
  • 1 tsp salt to taste

Instructions

    Peel and cube potatoes. Place in salted water and cook until done.

    Melt the butter in a skillet and add the diced onion. Cook until transparent.

    When potatoes are cooked, use a hand masher to break them apart in the water into bite-sized pieces — do not fully mash.

    Add the butter and onions to the pot of potatoes. Optionally, add a ladle of potato water back to the hot skillet, warm it, and add it back to the potatoes.

    In a cup, mix 1–2 eggs with flour to a runny pancake-batter consistency. Add a little water if too thick.

    Pour the drop noodle batter into the boiling soup while stirring gently. When the noodles float to the top, the soup is ready to serve.
