  • 3 tbsp extra-virgin olive oil
  • 0.5 tsp salt
  • 0.3 tsp black pepper
  • 3 leeks, white and light green parts, thinly sliced
  • 2 ripe tomatoes, cored and chopped
  • 1 cucumber, halved, seeded, and thinly sliced
  • 0.5 cup chopped parsley or cilantro

Instructions
