Latkes (Potato Pancakes)

  • 4 medium potatoes, peeled
  • 1 small onion, grated (optional)
  • 1 egg
  • 2 tbsp matzo meal or all-purpose flour
  • 1 tsp salt
  • 0.3 tsp black pepper
  • 0.5 cup peanut oil, for frying

Instructions

    Grate potatoes and, if using, the onion. Squeeze out as much liquid as possible.

    Mix grated potato and onion with egg, flour, salt, and pepper.

    Heat a thin layer of oil in a heavy skillet over medium-high heat.

    Drop spoonfuls of potato mixture into the skillet and flatten into patties.

    Fry about 2 minutes per side until crisp and golden brown.

    Drain on paper towels. Serve with applesauce or sour cream.
