  • 1/3 C. granulated sugar
  • 1/2 C. packed brown sugar
  • 1/3 C. packed flaked coconut
  • 2/3 C. chopped macadamia nuts
  • 2/3 C. chopped dates
  • 2 C. flour mixed with 1 tsp. baking soda and 1 tsp. baking powder

    Empty cookie mix into a large mixing bowl; stir to combine.

    Add 1/2 cup softened butter, 1 slightly beaten egg and 1 teaspoon vanilla extract; mix until completely blended.

    Roll dough into walnut-size balls.

    Place 2 inches apart on a lightly greased cookie sheet.

  5. 5

    Press cookie down slightly with the heel of your hand.

  6. 6

    Bake at 350ºF for 11 to 13 minutes or until edges are lightly browned.

    Cool for 5 minutes on baking sheet.

  8. 8

    Remove to wire racks to cool completely.
