- 3 medium potatoes, cooked, peeled, and cubed
- 16 oz can sauerkraut, drained
- 0.5 lb smoked sausage or kielbasa, thinly sliced
- 0.5 cup Thousand Island dressing
- 2 tbsp fresh parsley, chopped
- 0.8 cup shredded Swiss cheese
- 0.5 green bell pepper, cut into strips

Preheat oven to 350°F.

Combine sauerkraut, cubed potatoes, sausage, Thousand Island dressing, and parsley. Spoon into a greased 10×6-inch baking dish.

Bake for 25–30 minutes.

Sprinkle Swiss cheese and green pepper strips over the top. Bake 5 more minutes until cheese melts.
