Potato Soup

A rich, creamy Southern-style potato soup with smoked ham hocks, bay leaves, and a cream-flour thickener.

  • 2 whole smoked ham hocks (or 3 links sausage)
  • 0.5 gallon water
  • 6 whole bay leaves
  • 8 whole medium potatoes, diced
  • 0.3 cup all-purpose flour
  • 2 cup whipping cream
  • 0 to taste salt and pepper

Instructions

    Combine ham hocks, water, and bay leaves in a large pot. Bring to a boil.

    Add diced potatoes and cook over medium heat for about 30 minutes until potatoes are very tender.

    Whisk together flour and whipping cream in a bowl until smooth.

    Stir the cream mixture into the soup. Reduce heat and simmer until the soup is smooth and well blended.

    Season with salt and pepper. Remove ham hocks and shred any meat back into the soup if desired.
