  • 2 eggs
  • 1/2 cup all-purpose flour (I used King Arthur 100% whole white wheat - made from wheat that is actually white - not bleached)
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tbsp Smart Balance

Instructions

    Beat eggs, flour, salt and milk until smooth.

  2. 2

    Heat a 10-inch ovenproof nonstick skillet (I use cast iron) at 450 for 5 minutes.

    Add the Smart Balance and coat skillet.

  4. 4

    Pour in batter.

  5. 5

    Bake at 450 for 10 minutes.

  6. 6

    Reduce heat to 350 and bake an additional 10 minutes.
