- 2 eggs
- 1/2 cup all-purpose flour (I used King Arthur 100% whole white wheat - made from wheat that is actually white - not bleached)
- 1/4 tsp salt
- 1/2 cup milk
- 1 tbsp Smart Balance
Instructions

Beat eggs, flour, salt and milk until smooth.

Heat a 10-inch ovenproof nonstick skillet (I use cast iron) at 450 for 5 minutes.

Add the Smart Balance and coat skillet.

Pour in batter.

Bake at 450 for 10 minutes.

Reduce heat to 350 and bake an additional 10 minutes.
