  • 2 lb ground beef
  • 1 whole medium onion, chopped
  • 15 oz canned black beans, rinsed and drained
  • 1 0.5 tbsp chili powder
  • 2 tsp ground cumin
  • 0.5 tsp salt
  • 4 whole 7-inch flour tortillas
  • 10 0.8 oz condensed cream of mushroom soup
  • 10 oz canned diced tomatoes with green chiles, undrained
  • 1 cup shredded Cheddar cheese

    Preheat oven to 350°F.

    In a skillet, cook beef and onion until meat is no longer pink; drain fat.

    Add black beans, chili powder, cumin, and salt. Transfer to a greased 13x9-inch baking dish.

    Arrange flour tortillas over the top of the meat mixture.

    Combine cream of mushroom soup and diced tomatoes with chiles; pour over tortillas.

    Sprinkle with Cheddar cheese. Bake uncovered at 350°F for 25 to 30 minutes.
