English Meat Pie

- 1 slice onion
- 1 slice carrot
- 2 teaspoons salt
- 1/2 lb. lean raw ham

Brown 1/2 pound sausage in a skillet with 1/4 cup chopped onion and 1 each diced celery stalk and carrot.

Add 1/2 cup mashed potatoes, and salt and pepper.

Blind-bake the pastry at 180°C/356°F for 5 minutes each time.

Bake fresh pies at 180°C/356°F for 12-15 minutes, or until lightly golden.

Turn the oven temperature up to 425°F with rack in the center of the oven.

Lightly butter a 9 or 10-inch pie dish.

To reheat, preheat the oven to 350 degrees F (175 degrees C).

Place the meat pie on a baking sheet and cover loosely with foil to prevent over-browning.
