- 4 chicken breasts (or 8 chicken thighs)
- 1 cup melted butter (or margarine)
- 0.8 cup seasoned bread crumbs

- ½ cup dry, white wine
- ¼ cup finely chopped, fresh parsley

Flatten each chicken breast to 1/4-inch thickness between two sheets of plastic wrap using a rolling pin or mallet.

Discard the plastic wrap and slice each breast in half lengthwise.

Fold the narrower end of each chicken breast up over butter to form a tight pocket around the butter.

Gather the sides of each chicken breast to the center to form a round ball.

Coat the rolled chicken through the standard breading procedure of seasoned flour, egg wash, and breadcrumbs.

Fry the chicken until crisp.

Add apple juice, parsley and onions to the reserved melted butter.

Remove the chicken from the oven and pour butter sauce over the chicken.
