Cucumber Soup

  • 1 slice onion
  • 0.5 cup cream
  • 3 cup White Stock III
  • 2 tablespoons butter
  • 2 blades mace
  • 3 tablespoons flour

Instructions

    Heat butter in a large saucepan over medium-high heat until butter melts.

    Add onion and garlic; sauté until translucent, 3 to 5 minutes.

    Peel and seed the cucumbers.

    Pulse the cucumbers in a blender with a little chopped onion, buttermilk, sour cream, olive oil, dill, salt, and pepper.

    Blend until smooth.

    Season with salt and white pepper, cover, and refrigerate.
