  • 1 to 2 pounds Smoked sausage, cut into 1" slices
  • cans black beans, drained
  • 1 0.5 cup Onions -- chopped
  • 1 0.5 cup Green pepper, chopped
  • 1 0.5 cup Celery, chopped
  • 3 clove Garlic, minced
  • 2 tsp Leaf thyme
  • 1 0.5 tsp Leaf oregano

  • 0.3 tsp Cayenne pepper

  • 5 Bay leaves
  • 1 can 8-oz. tomato sauce
  • 1 cup Water
  • Hot boiled rice
  • Brown sausage in a skillet over med. heat. Drain fat and transfer to crackpot.
