Maw Maw's Slaw With A Ginger Soy Dressing

- 1 large egg
- 0.5 tbsp Dijon mustard
- 0.5 tbsp chopped garlic
- 0.5 tsp minced fresh ginger
- 1 tbsp soy sauce
- 0.3 tsp freshly ground black pepper
- 0.3 cup vegetable oil
- 0.3 cup sesame oil
- 0.3 lb white Napa cabbage, shredded
- 0.3 lb red cabbage, shredded
- 0.3 lb fresh spinach, trimmed and shredded
- 0.5 cup thinly sliced red onion
- 0.5 cup chopped green onions, green parts only
- 0.3 cup chopped fresh parsley
- 1 tsp sugar

In a food processor, combine the egg, Dijon mustard, garlic, ginger, and soy sauce. Process until smooth. Season with black pepper.

With the machine running, add the vegetable oil and sesame oil in a steady stream. Process until thick and creamy. Season with salt and pepper if needed.

In a large salad bowl, combine the Napa cabbage, red cabbage, spinach, red onion, green onions, parsley, and sugar. Toss to mix.

Add the dressing and toss thoroughly to coat. Cover and refrigerate for at least 1 hour before serving.

Serve chilled. The slaw can be made up to 3 hours ahead.
