Korean Zucchini Salad (Hobak Namul)

  • 0.8 lb zucchini (1 medium)
  • 1 stalk green onion, chopped
  • 0.5 red pepper, cut into large pieces
  • 2 cloves garlic, crushed
  • 1 tbsp sesame oil
  • 1 tsp toasted sesame seeds
  • 1 tbsp salad oil
  • 1 tsp salt to taste

Instructions

    Cut the zucchini lengthwise in half, then slice into half-moon shapes about 1/4 inch thick.

    Soak the zucchini slices in salted water for about 5 minutes, then drain well.

    Heat salad oil in a pan over medium heat. Cook the zucchini until tender. Add chopped green onion and crushed garlic.

    When done, remove from heat. Add red pepper pieces, sesame oil and sesame seeds. Mix well by hand.

    Transfer to a serving plate and serve as a side dish.
