  • 3 potatoes, peeled and sliced
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 0.5 cup tomato sauce
  • 0.3 cup low-sodium soy sauce
  • 1 tsp dried thyme
  • 1 tsp dry mustard
  • 1 tsp dried basil
  • 2 tsp chili powder
  • 0.5 tsp ground cinnamon
  • 2 tbsp fresh parsley, chopped

Instructions

    Layer vegetables in slow cooker in this order: potatoes, onion, carrots, green pepper, zucchini, corn, and peas.

    Whisk together tomato sauce, soy sauce, thyme, dry mustard, basil, chili powder, cinnamon, and parsley.

    Pour sauce evenly over vegetables — do not stir.

    Cover and cook on HIGH for 6 hours, or LOW for 12 hours, until all vegetables are tender.

    Stir gently before serving. Serve in bowls or over rice.
